Do-It-Yourself Snowskin Mooncake (Recipe provided!)

Hi Guys! It's (almost) the time of the year again! YES Mid Autumn Festival, or aka Mooncake Festival! Being the gluttons that we are, how can we resist making some mooncakes for ourselves??
We know.. you must be thinking "why do I need to go through the hassle of making mooncakes especially when it may not even taste as good as those you find outside?"
Our advice is for you to treat it as a team bonding activity for your children or loved ones, and don't have overly high expectations of the quality, after-all anything made by people you love tastes best right?
The good news! You can make approximately 25 mooncakes with only SGD$20! Take public transport there! It's near Aljunied MRT :)Ingredients:1) 300g Glutinous Fried Rice Flour (Gao Fen)2) 370g Icing Sugar
3) 3 Tablespoons of Shortening4) 300ml of Cold Water (Boil water with pandan leaves for fragrance)5) 1 Teaspoon of Green Pandan Essence (For colouring purposes.)
I grew up with my grandma making mooncakes every year. Without fail, each year the lotus would taste the same. As I became older, I tried "hotel standard" mooncakes and found that it was not as nice as the one my grandma made. Hence, I knew I had to search for my childhood flavour, and we needed to look no further than KCT.
At KCT, we were able to try up to 30-40 variations of lotus paste. Flavours that caught my attention include Royal Thai Milk tea, Durian and Oolong flavours. However, I still longed for the traditional version. Which is either made by KCT, or imported from Hong Kong.
And yes, I found my childhood flavour, "HK Lotus Paste". Do give it a try and let me know if you found it nice!
Process
First, sift the glutinous rice flour and icing sugar together.
Then, mix the flour mixture with cold green pandan water (with green essence) and the 3 tablespoons of shortening. Be sure to rub the shortening with your fingers to ensure they are well integrated into the dough mixture.
Roll and cut the dough into 15grams each, and the lotus paste into 35 grams each. Each mini mooncake should be about 50g depending on the mould you use.
